My conversion is 1ft is equal to 1in on the paper. I get that my 10ft wall is 10in on the paper. I hate working scale measurements with a standard 12" ruler, broken into 8ths or 16ths, for the reasons you're finding. It would make your project a lot easier if you go to an office supply store, such as Staples, Office Depot, etc., and purchase an Architect's Rule. This is a triangular 12" rule with 6 different scales, one of which is 1" broken into 12 inches, not 16ths. A plastic rule will cost around $3.
To use a standard 16ths ruler for feet and inches, divide only the inches by 12, multiply by 16, then add the result to the feet.
Using your 6' 2.5" as an example:
Ignoring the 6' momentarily, divide the inches by 12: 2.5" / 12 = 0.208333
As there are 16/16ths to the inch, multiply 0.208333 * 16 = 3.33 16ths of 1 inch, or 3 1/3 16ths. You'll have to guess at the 1/3 of a 16th
Add the 6' back, so your scale measurement will be 6 3/16"
Even if your measurement is in feet only, to insure accuracy, simply write the measurement adjacent to or on the line showing the wall. A linear scale is also recommended, because if you make copies, they are not usually 1:1 and the scale will be a little off.
